It is not only the diversity of flora and fauna present in the nature, but also the thousands of plant varieties and animal breeds selected by the knowledge of the farmers in their territories; varieties and breeds today more than ever threatened and endangered.

In the United States it gets to 95%.
Today, the 60% of the world supply is based on 3 species of cereals: wheat, rice and corn. We produce our food growing very few varieties (hybrids selected to give high yields) with chemical fertilizers and pesticides and raising a few breeds with industrial methods. This production model is harmful to the environment and to our health.
Slow Food coordinates several projects to protect biodiversity across the world through the Slow Food Foundation for biodiversity.
Slow Food Foundation projects are instruments of promotion of a different model of agriculture, based on biodiversity, on respect for the land and culture of local communities.
